AVOCADO TOAD-IN-A-HOLE

Adapted from Nom Nom Paleo

  • 1 large Avocado
  • 1 Tablespoon of Ghee (clarified butter)
  • 1 large free range egg
  • “Dalmatia My `Mom’s Red Pepper Spread or Ajvar (found in Eastern European stores)

One avocado will serve 2 or just you (you can use the other half for your snack with sliced almonds or as an add on to your lunch salad).

Wash a ripe avocado. Cut avocado in half. Remove the pit and then slice off the bottom (rounded end) so that it will lie flat in a pan). Cut around and through the pit hole.

Melt ghee in a small pan (an omelet pan works) on a med/high flame. When the ghee bubbles, place the avocado in the pan.

Crack your egg, remove a bit of the egg white if using a large egg, because it might spill over the top; however, if you use a smaller egg rather than a large one you won’t have a problem). Pour the egg into the avocado hole. Cover and lower the heat. Cook for 2-3 minutes (watching for the egg to set).

Use a spatula to gently flip the avocado slice over. Cook for another 1-2 minutes on low heat. Serve with a dollop of red pepper spread. It is filling, delicious AND it doesn’t raise your blood sugar!!
